Step 2 Fo' masala _peel onion and ginger and make round slices of one onion and cut the other onion in brunoise dice..peel, cut and make long juliens of ginger, slit green chillies in half and blend 2 big sized tomatoes in a mixture blender, make semicircle slices of one tomato by cutting into half
  3. Step 3 Take a wok or a pan and fry onion slices,ginger juliens and slit green chilles one by one in little by little oil and take out..now in the same pan roast bay leaf,cinamen stick, green cardmum and star anise..take out and keep aside
  4. Step 4 Add chopped onions and stir fry till golden in colour then add blended tomato and cook till the whole juice of tomatoes evaporated and the masala get cooked nicely, now add salt,red pepper powder, roasted cumin powder,chana masala and stir fry fo' one minute more..add boiled chick peas and fried herbs and give a good mix to chick peas with masala..cook fo' 5-7 minutes till the chick peas get a semi thicken texture(and't too much dry)..at this stage add garam masala,coriander leaves and flame off
  5. Step 5 Garnishing_Now time to dish out the chanas.. For this transfer the chanas in a borosile bowl or a cassrole and slightly arrange the fried sliced onions, spread ginger juliens, set fried green chillies and set lemon curls flower in the center..garnish semicircle tomatoes and coriander leaves
  6. Step 6 Masala chanas r done with garnishing
  7. Step 7 Serve hot with lachha paratha or naan
