  1. Step 1 First cut the bhindi and potato leanth wise pieces and onion cuts into diced and fry them separately, keep aside.
  2. Step 2 Same kadai add mustard oil bay leaves, cumin seeds and saute few seconds then add chopped onion and fry them for 3-4 minutes then add ginger garlic paste,red chilli powder, turmeric powder, cumin, coriander powder and chopped tomatoes and cook on low flame sometimes.
  3. Step 3 Once masala cooked and mashi then add fried potatoes, onion, bhindi pieces and mix it properly and cook another 4-5 minutes. Sabji is done.
  4. Step 4 Aloo bhindi sabji is ready to serve.

Later on we toss in oil and spices. Here I have posted my version of aloo bhindi which require less oil for cooking but also taste good. When I started cooking was unable to handle bhindi. Add red chili powder, chili flakes, amchoor powder, salt, and coriander powder. Stir well until the potatoes are well combined with spices.
